Our Salmon

Salmon has always been popular and it’s easy to see why. Salmon is easy to cook, it looks beautiful whether is on the fishmonger’s slab, sizzling in the pan or steaming on the plate. It’s a super versatile fish that lends itself to a variety of preparation techniques. Steaming, poaching, pan-frying, roasting, barbecuing, smoking, grilling or simply serving as sashimi, this fish ticks all the boxes.

Salmon also fulfils the demands of a healthy, modern diet being nutrient dense and an excellent source of high-quality protein, vitamins and minerals. Its high content of omega-3 fatty acids that contribute to healthy brain function, joint mobility and a proven lowered risk of heart disease means that not only is it “brain-food”, but should be considered an essential addition to everybody’s diet.

OUR Salmon

We are proud to sell Salmon produced in the remote, cold & clean waters of the Faroe Islands. The company that produce these beautiful Salmon are called Bakkafrost whom specialise in raising healthy, superior quality Atlantic Salmon. Rich in flavour, supple in texture, and pleasingly vibrant in colour it carries with it a taste of the pristine waters in which it was raised.

Bakkafrost have a unique and unrivalled vertical integration that controls every aspect of producing Salmon. They manage their own fleet of boats to catch the wild blue whiting that is used to produce fish meal and fish oils that makes up the diet of these Salmon. Bakkafrost oversee the entire lifespan of the fish from hatchery, brood stock and farming to the harvesting and production of the freshest, most sustainable and healthy fish on the planet.

This year (2020) sees a new biogas plant begin operations which will convert biological waste from the farming operation into clean energy, heating and natural fertilizer to the local farmers. Estimated to produce 45-50,000 tonnes of natural liquid fertilizer, providing heat for 400 homes and electricity for 1,900 homes. The biogas plant is estimated to save the environment 11,000 m3 CO2 per year.

By the end of this year (2020) 100% of Bakkafrost’s facilities will be fully ASC accredited. This is a marker of quality that has real meaning and true indication that the farm has understood its responsibilities not only to the consumer but to the welfare of the animals and the environment.  (ASC, the Aquaculture Stewardship Council are the younger brother of the better-known MSC, the Marine Stewardship Council)
